A Ski Day Date at Canyons Resort
Finding time to date my husband is tough. With two young boys, my husband and I don’t have a ton of free time and nights seem to be filled with after school activities, homework and quite honestly, we’re often too tired to even think about going out. Because we both realize how important it is to spend time together without the kids, we’ve started what we like to call “day dating”. With both the boys in school a few days a week, mornings and afternoons are our best time to spend some alone time. Sometimes we’ll take a yoga class or a take the dog for a hike but this time of year, we spend most of our day dates snowboarding together. It’s something we both love to do and when we can get our exercise in and catch some fresh air at the same time, it’s all bonus.
This past week, we took our date to the next level and had lunch at Lookout Cabin after enjoying a morning of riding fresh powder. We sat by the window, had a drink and enjoyed a superb meal before we had to pick the kids up from school. It was an official date sans lipstick and I totally had helmet hair but no one seemed to notice. The foodie and chef in me loves the open kitchen in the middle of the restaurant. If you can, sit by the window; the sunshine coming through was just enough to warm me up and I love watching the snow fall. The Olympics were playing on two tv’s about the bar so if not the window, saddle up to the bar and grab a hotty toddy.
The menu has some new changes this season but rest assured the fondue and burger are still on the menu- two of my favorites! We opted to share everything (we were on a date after all!) and took our time ordering in courses. We befriended the folks at the table next to us who were visiting from Boston and shared reviews on what we’d ordered. They ordered the spinach salad with salmon and the prime rib sandwich with caramelized onions and blue cheese. Two glasses of wine later, they’d joined the clean plate club. I can’t think of a better review than that!
The highlight of my meal was the soup of the day: a light cream of spinach soup with caramelized onions and crispy bacon. It was unreal. I’m totally going to try and recreate it at home. So full of flavor and I’m a sucker for anything with bacon. Like I said above, the burger is always a winner for me- it’s juicy, HUGE and loaded with crispy tobacco onions, sharp cheddar and crispy bacon. (See? Bacon again- it gets me everytime!) My other favorite was the grilled veggie salad. I know, I know. A grilled veggie salad? Trust me, folks, it was amazing! When you can make a vegetarian salad stand out, you’re doing something right and Lookout nailed it.
After a long, leisurely lunch we (not so comfortably) bent over to strap on our boards and got in one last run down Doc’s before picking up the kids. Date date, superb meal and in bed by 8. Day dating at it’s best.
